A cousin served this with meat loaf. Very simple.
- 1 1⁄2 cups water
- instant mashed potatoes (4 servings)
- 16 ounces sour cream
- 8 ounces cottage cheese
- salt and pepper
- 1 teaspoon chives
- 1 dash paprika
- 1 cup shredded cheddar cheese
- Boil water, add to instant potatoes in a casserole.
- Add sour cream, cottage cheese, stir.
- Sprinkle with salt, pepper, paprika.
- Sprinkle cheese on top.
- Bake at 350 for 15 minutes.
