This recipe came from a co-worker. Great little muffins.
- Preheat oven to 450 F.
- Grease 2 mini muffin tins (24 count size).
- Combine all ingredients until well blended.
- Bake for 15 minutes or until golden brown.
- Serve hot.
- Great with a little jam or jelly.
I added a bunch of italian herbs and served these with a slow cooked roast in an onion sauce. Hubby loved them!
I was going to add this from The Star of Texas Cookbook by the Junior League of Houston. They have the ratio there with a 1/2 cup of sour cream so I just thought I'd add it just in case someone wants to make it with less. Thanks for posting this! Can't wait to try it with only 3 ingredients!
