The flavors were great. This dish was almost too easy to prepare! I used pinto beans with jalapeño which added a little more spice. We enjoyed this dish very much. It will definately be made again. Thanks for sharing.
Great flavors. Easy and the kids liked it. Any dish that I can get the picky ones to eat easily rates 5 stars. Thanks for posting this one, it goes into my "repretoire".
This is a really tasty! It makes a lot so it is perfect for potlucks/big families or get togethers. :) Very filling and so tasty!
This is from Better Homes and Garden's Casserole Recipes cookbook; my grandma gave it to me years ago and it's the only recipe in it that I've ever made more than once (I've made it dozens of times). I use hot chili beans instead of the pinto beans, and use much more cheese and Fritos than written. For my family (DH and two boys) I always double it and it generally gives us one hearty dinner and a snack for my kids.
This was absolutely delicious. Quick & easy, and both me & my husband loved it. I replaced the pintos with black beans, and the Fritos with tortilla chips. Yum!
Yummy! I used fresh onion instead of dried minced onion and browned it with the meat. It looks very pretty with the corn chips around the edges and the sour cream and cheese in the middle. I sprinkled chopped green onions on top for some extra color. Great kid-pleaser! Thanx for sharing!
I just had to write you (Miss Diggy) because this is the closest I have come after 15+ years of searching for a recipe I must have made 100 times nearly 30 years ago when I was still married. There are so many recipes out there that are similar but just not the same! For some strange reason my recipe card disappeared around the time of divorce. (I dunno--may ex took it with him because it was one of his faves as well!) Kids are long gone from the house but I am going to make this soon for the next time I have them over for dinner and shock the h*** out of them and please them at the same time. Even my non-red meat eating (at the time) brother was crazy for this one. Again, thanks so very much!!!
This was very yummy for a quick Friday night meal. I used ground chicken breast, green enchilada sauce and Mexican tomato sauce. I did use 1/2 cup chopped onion to the meat and I'm always looking for a way to add another vegetable, so I finely chopped 1-1/4 cup green cabbage & added to the onion and meat to soften. The cabbage enhances the flavor, although it doesn't taste like cabbage (even DH didn't detect the addition). Thanks, Miss Diggy for posting!
Fantastic meal! I used Fritos and the only change I made was to use onion powder instead of onion to please my picky eaters. Although this recipe says it serves 10 -12, the 6 of us gobbled it almost gone, with one serving for my DH for lunch the next day. He says it was really good reheated too!
