We loved this cake. It's totally delicious. The instructions need a bit of work. It doesn't say whether or not to pack the brown sugar, so I packed one cup and not the other -- that worked fine. It took me more than 20 minutes to bring everything together -- chopping walnuts, mashing bananas, mixing, measuring etc. By the way, you need a really large bowl to hold all the ingredients. I didn't know whether to grease and flour the baking pan, but did both. I cooked this in a 9x13 pan, and rightly thought that a half batch of frosting would be plenty for that single surface -- and for no lumps, it's a good idea to sift the icing (confectioner's) sugar. Great cake. Thanks for posting.

Ingredients Nutrition

  1. Cream brown sugar and 1 cup butter. Add eggs 1 at a time, beat well.
  2. Add mashed bananas, flour, salt, baking soda and 1 cup sour cream.
  3. Add vanilla and nuts last.
  4. Pour batter into 3 9" pans or a 13x9" pan. Bake in a preheated 350 degree oven until cake tests done with a tooth pick, about 30-40 minutes for the rounds or 40-50 minutes for the 13x9.
  5. To make Frosting: mix 1/2 cup butter, 4 cups confectioners sugar and 1/4 cup sour cream (more if needed). Add 1 teaspoons vanilla and beat until fluffy.
