Quick, cheap, and easy to make. This can be made vegetarian (vegetable stock) or with chicken stock.
- 1 cup rice
- 1 tomatoes
- 1 zucchini
- 1 teaspoon salt
- 1⁄2 cup chicken stock or 1⁄2 cup vegetable stock
- Sauté rice in butter.
- Add chopped tomato and zucchini and cook for a few minutes.
- Add chicken (or vegetable stock) and salt.
- Bring to a boil.
- Cover and let simmer until liquid is absorbed.
