I think most people know by now that Sonoran enchiladas are not rolled but stacked. This is a Sonoran enchilada pancake (my husband rates it 5 stars). Not only did his mom and grandma make this, but when we went to Vera Cruz on vacation this year, it was right there on the breakfast menu, YES!!!!!

  1. In small bowl heat enchilada sauce in microwave about 1/2 -to 1 minutes, depending on microwave.
  2. In pan on stove, heat oil and dip one tortilla at a time. Sprinkle cheese in between layers or on top, as you like.
  3. Put on plate-tortilla.
  4. Put on sauce.
  5. Put on tortilla.
  6. Put on sauce.
  7. Put on tortilla.
  8. Put on sauce.
  9. Fry egg and put on top.
  10. Garnish with your favorite hot sauce, or thinly sliced green onion bottoms.

Oh my, were these GOOD!!! Plus, they look beautiful on the plate. Edited to say that I make this all the time and it's one of our favorite breakfasts. Thanks Jasmine!
