From the Minnesota Scandinavian chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.

Ingredients Nutrition

  • 1 cup butter (no substitutions)
  • 1 cup sugar
  • 1 egg
  • 18 teaspoon cardamom
  • 2 cups flour, sifted
  • 14 teaspoon salt
  • 4 almonds, mashed
  • 12 teaspoon almond extract
  • 3 tablespoons cream

Directions

  1. Preheat oven to 400°F.
  2. Cream butter until light.
  3. Add sugar gradually and cream again.
  4. Add egg and beat well.
  5. Stir in flour, cardamom and salt.
  6. Add mashed almonds, flavoring and cream.
  7. Blend thoroughly.
  8. Chill.
  9. Press into Sonn Bakkels forms (a fluted round pan about an inch deep and 3 inches in diameter) to 1/4 inch thickness.
  10. Bake for 20 minutes.
