Sommer's Special Scramble

"I've made this at least four times now. After the first attempt, my bf wouldn't stop asking me for it. He'd go out and buy the ingredients for it and/or make some other hint about how he was craving it. Coming from my bf who doesn't offer any hints as to his feelings on anything, this is a pretty big deal (lol). Although everything is estimated because I was using up what was left in the fridge, it turned out really well. This should make two very hearty servings. I've made this for both breakfast, dinner, and lunch, depending on our cravings (or when we got up that day). Great for weekday or weekends. If you don't need to worry, use real eggs, otherwise this is an egg-free dish. ETA: Just to clarify, the spicy pork sausage listed is actually breakfast sausage sold in 1lb chubs (another good kind to use is Jimmy Dean brand spicy)."

  • 3 -5 russet potatoes (3 if large, 5 if smallish)
  • 1 medium onion (either sweet or yellow)
  • 8 ounces bulk spicy pork sausage (Kroger actually makes a great hot pork sausage, I just cut the 1lb chub in half and save the other f)
  • 34 cup egg substitute (equal to 3 whole eggs)
  • salt
  • pepper
  • garlic powder
  • 4 tablespoons margarine (I use Smart Balance Spread with Flaxseed Oil) or 4 tablespoons butter (I use Smart Balance Spread with Flaxseed Oil)
  • 12 tablespoon canola oil

  • In a large skillet or pan with lid, brown and crumble pork sausage on med-high heat until cooked through, stirring occasionally. If necessary or desired, add a minimal amount of canola oil. Sometimes I let the sausage get a bit crispy/well-done.
  • While sausage is browning, peel and slice potatoes into thin slices (1/8 of an inch). Slice onion thinly then cut slices into quarters (can leave in slices/rings, but my bf prefers his onion rings sliced into quarters).
  • When sausage is done, line a bowl with a paper towel and lift out sausage with slotted spoon or slotted spatula and place in bowl, keep warm. Retain as much of the drippings in the pan, but the rest will drain on the paper towel.
  • Add butter or margarine to the same pan and melt on med-high. I usually use about 2-4 tablespoons worth, but I start minimal, and add more if needed. Add potatoes and onions, cover and cook 10-15 mins, stirring every 5 minutes.
  • Flip potatoes over to try and get them evenly browned. Sprinkle with salt, pepper, and garlic powder to taste. I usually use 1/4 tsp salt, 1/2 tsp of pepper(or more) and 1/2 tsp of garlic powder (or more). You can always add more later. Stir, then cover and cook for another 5-10 minutes.
  • Uncover and cook another 5 minutes or until potatoes are tender and browned to your liking and onions are caramelizing and some might even be browned and crispy. Add more pepper and garlic powder if desired.
  • Transfer potatoes and onions to the bowl with the sausage, or to a separate bowl. Keep warm.
  • If more butter or margarine is needed, melt a minimal amount in the same pan, and still on med-high, add the egg substitute. Add a bit of extra salt or pepper, if desired. Let sit for several seconds as the egg firms up, then scramble and cook to desired doneness. Right before your eggs are looking the way you like them done, dump back in your sausage and potato/onion mixture. Stir all together until heated through.
  • Chopped green peppers would probably go great with this also, can probably be added with potatoes and onions depending on how done you like your peppers.

  1. Yum! This is what DH and I always make when we are at the cottage. Everyone calls it "Skillet" because we make it in a large cast iron skillet there.   2. This was really good. I grew up eating breakfast burritos with sausage and egg wraped in a flour tortilla. I now have a new way to fix them. We prepared this as directed except I used breakfast sausage, real eggs and red potatoes(thats what I had on hand). This was excellent and my husband loved it as well. We did wrap it in flour totillas and added cheese to the top. Thanks for sharing.
     
  3. When making this recipe, I used mild Italian sausage & real eggs & then a small amount of lemon pepper instead of the salt/pepper/garlic powder combo! Another time I'll try the egg substitute! Makes for a nice tasting, definitely filling meal! [Made & reviewed for one of my adoptees in this Spring's PAC]

I might add a couple notes or links to my page here such as forums I frequent, fave searches, and helpful info. Update March 2008: I was given the opportunity to join my very first recipe swap (I added the banner below, thanks Um Safia) This swap was really fun, interesting, and helpful. Lots of great recipes to choose from and lots of exposure for my own. I thought I'd update this a bit. It's April of 2007 already (wow!) and I might have written the stuff below at least a year ago, and longer. I live in AZ, with a roommate and a nice boyfriend. My roommate has only tried my cooking once, but my bf, bless his heart, tries really hard to tolerate it, lol! He's a good cook in his own right, but me, I'm still a newbie cook at heart. I still enjoy 'zaar and sometimes spend hours and hours on here, as it's still friendly, helpful, and interesting. :) Also, this is late in saying, but I'm supposed to be on an IBS-safe diet consisting of no dairy, egg yolks, caffeine, red meat, too much fat, everything I love, etc.... so I'm working on it, it's taking me years and years, but I've incorporated this kind of diet into my other eating, and if my tummy gets mad at me, well, I only have me to blame. :/ I've been married for almost two years and it's the first time I get to really cook for someone other than myself. (Hehe, I signed up with here not too long after I wrote this, now I'm separated - not because of my cooking lol - but surprisingly found myself again, acting as 'housewife'.) I'm not a great cook, but I do follow after my mother, who tends to estimte her ingredients and taste as she goes, but she and my sister are two of the best cooks I know. The best rule of thumb for seasonings is always add too little, you can always add more, but can't always take away if there's too much. I mostly try other recipes I find, but now and then experiment with whatever I have available if I can't get to the store or am broke, and sometimes come up with pretty good recipes. I also have a hard time cooking usually, it takes me longer than most people as I am legally blind and have no depth perception so sometimes it's hard for me to measure and prepare food. Any of the recipes I post might be estimated unless otherwise stated. Sorry for the inconvenience. :) I found this place doing one of my recipe searches. It looks like a fun place to get recipes.
