  1. In a large bowl, combine 3 1/2 cups flour, yeast, salt and sugar.
  2. In a small saucepan, combine milk and butter, and place over low heat until milk is lukewarm.
  3. Pour into bowl of dry ingredients, and mix with a fork to make a rough dough, adding more flour if necessary.
  4. Using a mixer with dough hook, or by hand, knead dough until smooth and silky.
  5. Place in an oiled bowl, and cover with plastic wrap.
  6. Let rise in a warm place until double in size, about 1 hour.
  7. Punch air out of dough.
  8. Oil a baking sheet, and set aside.
  9. Pull off pieces of dough the size of walnuts, and form into round balls.
  10. Place on baking sheet almost touching, about 1/4 inch apart, in 6 rows of 5 each.
  11. Cover with a kitchen towel, and let rise in a warm place 30 minutes.
  12. Meanwhile, heat oven to 425 degrees.
  13. When rolls have risen, make a glaze by beating together the egg, milk and salt.
  14. Paint rolls with glaze.
  15. Sprinkle one row with sesame seeds and the next with poppy seeds; leave the third row plain, and then repeat pattern.
  16. (A teaspoon of seeds should decorate 2 rows.) Bake rolls until risen and golden brown, about 15 minutes.
  17. Transfer to a cooling rack or serve immediately.
  18. To serve, place on a plate so rolls can be torn off to be eaten.

This is one of the first recipes I made with my KitchenAid mixer. If you have a stand mixer these rolls are no work at all. They come up nice and fluffy and are beautiful with the seeds sprinkled on top. I used quick rising yeast and found the dough doubled in size in about 30 minutes.

I did 1/2 the recipe . I made the dough in my bread machine, which has a special cycle for quick rising yeast doughs-- ( quick dough cycle) --then I made 8 rolls and put them on a pie plate to rise. Before putting them in the oven, I painted them with the egg glaze. Then I baked them at 400 for about 15 minutes. The rolls came out wonderful!!! Everyone had two . Thanks for this great recipe-- I will definately make again.
