hi there dicentra, we are always looking for different recipes for "our" staples here at the home and here it was. we have to be careful because our residents are so used to eating their food their way - there is no breaking the mold. however, these made a big hit - because the black beans don't have too many add-ins with the exception of the jalapeno and for them we used a little less. The pork tasted delicious and with the black beans it was awesome! I added a whole scotch bonnet to the pork and it gave off some heat but cooking it whole i learned in Haiti (I think) & we used 1/3 of the jalapeno and it was tender and delicious! We added a mild salsa, sour cream and guacamole, it was superb thanks so much for posting, Manami ;)
