This is from the Women's Weekly "Stews, Braises & Casseroles" cookbook.
- 3 cups water
- 2 cups vegetable stock
- 2 cups polenta
- 1 cup milk
- 1⁄4 cup parmesan cheese, finely grated
- Combine water and stock in a large saucepan; bring to the boil.
- Gradually add polenta to the liquid, stirring constantly. Reduce heat; simmer, stirring, about 10 minutes or until polenta thickens.
- Add milk and cheese; stir until cheese melts.
This side dish made a nice change from the usual. I'd like to try it with cheddar.
