Got this recipe from an Aunt. If you prefer a softer ginger cookie, these are perfect for you. Can make the dough up and keep in fridge for several days.

  1. Cream shortening, sugar, eggs, spices, molasses and baking soda well.
  2. Add flour.
  3. Chill at least one hour.
  4. Drop by teaspoons and bake for 8 minutes.

This recipe makes fantastic cookies and LOTS of them! The cookies are very soft and chewey! I added 1/2 tsp of nutmeg for a little extra flavour and rolled them in granulated sugar before baking. I baked them at 325F for 8-10mins, as the recipe didn't specify a cooking time. Enjoy!
