      Manda, your Moms favorite cookie is now my favorite cookie. I adore pineapple. I made these for a neighbor, then had to do it again for us! I took the advice of the previous reviewer and put wax paper between layers of cookies.I baked mine for 12 minutes. So easy to make, and SO good to eat!

      These are fantastic cookies. The only thing I would add is a note saying not to stack these cookies as they will stick together. Thank you for sharing this recipe.

      i made them, very tasty...not too sweet...but i was disappointed because they weren't chewy...more cakry...but substituted canola oil for the shortening so that may be why. all in all, a great cookie to have w/tea.

      I tried it with just pineapple and thought it needed something more. So I added coconut & chopped pecans. I think they are perfect now! My neighbor loved them and just ran away with my recipe!

      I was disappointed in these cookies. Part of the problem is my own, Ithink. i got 7 doz. from the recipe instead of 5 - should have baked them for 10 min. instead of 12. they were a little dry and they had very little pineapple taste - i drained the pineapple really well - maybe should have left some juice?? i will try them again, maybe!

      Pineapple is my favorite fruit so I thought I'd give these cookies a try. I used fresh pineapple, mashed it up and drained it. The cookies taste fine and are chewy, but don't really taste much like pineapple. The flavor really reminds me of a plain sugar cookie. My mother said they tasted pineappley, so maybe it's just me.

      Absolutely AMAZING! Manda, thank you SOO much for sharing! I don't know what the reviewer that said they weren't "pineapply" enough did wrong, because I definitely DON'T agree. The only thing that the recipe needs is pitted cherries pushed into the middle of the cookie to make it an almost perfect pineapple upside down cookie! THANK YOU THANK YOU THANK YOU!

      yummy and easy to make. I added walnuts and additional pineapple. The cookies are chewy and light which I absolutely love! Next time I will also cut recipe in half.

      These are so yummy! They're always a big hit when I make them and are one of the cookies we make sure to make at Christmas time. Sometimes when we make them, we'll sprinkle a little sugar on top.

      My DH and DD are the pineapple fans, not myself. I did think this was a good cookie, though, but different from what I expected from some of the reviews. I was expecting a not too sweet, mildly flavored base, so the first thing I did was make up a batch of cream cheese frosting to have ready for them before I even made the cookies. I needn’t have bothered. My cookies turned out full of pineapple flavor and brown sugar sweetness. Kind of like pineapple upside down cake cookies. We used the frosting on other items, as these were fine by themselves. My cookies were also slightly chewy, not cakey. (I used half regular shortening and half butter flavored shortening, and baked them for the specified time on chilled, parchment-lined cookie sheets.) I’m looking forward to trying different things with this recipe, such as nuts and coconuts, as another reviewer suggested, or maybe even throwing in some white chocolate chips. Thanks bunches!

      Very nice, moist cookie. I added about 1/2 cup chopped walnuts to the batter. This is a wonderful cookie recipe when your looking for something different. I will make these again. Thanx for posting this!!

      I was disappointed at how faint the pineapple taste was (I was looking for a good cookie for my luau). Since it is also not very sweet, I think I may try to salvage the batch by icing them with icing I have flavored with some pineapple juice.

      This is a lovely little cakey cookie. I made with one little kid in mind, and was surprised by how much everyone loved them. A keeper!
