Yummy! Used to sell these to raise money for the Humane Society. They are soft and sweet. They taste like the ginger cookies at Starbucks except better. My grandmother's recipe.
- 3⁄4 cup unsalted butter, melted
- 1 cup sugar
- 1⁄4 cup molasses
- 1 egg, beaten
- 2 teaspoons baking soda
- 2 cups flour
- 1⁄2 teaspoon clove
- 1 teaspoon ginger
- 1 teaspoon cinnamon
- 1 pinch salt
- Mix, chill, roll into small balls.
- Roll in sugar, place on very lightly greased cookie sheet.
- Bake at 325°F until brown, about 18 minutes.
I've baked these cookies half a dozen times now and they are always a huge hit at work. People rave about how flavorful they are. I love how they are slightly crispy on the outside once cooled but have a soft and tender center. Best ginger cookies EVER! 5 Snaps up! ?
Its not Christmas without these Gingersnaps (and the shortbread that comes with them!) Soft and chewy as the title suggests. A delicious way to expand your waist this Christmas!
