This is a superb recipe! Like a rich, yummy cooked salsa. I've never had sofrito before but you can bet I'll have it again. I added about 1/2 a jalapeno because I had it left over from another recipe & I simmered the sauce longer 'cause it was ready before my chicken. We ate it over chicken, rice and with black beans. Awesome everywhere! Made for PAC Spring 2008.

  1. Sauté tomatoes, pepper, onion, garlic, cumin and oregano in oil slowly until all vegetable are lumpy.
  2. Add sherry wine and simmer for about 20 minutes.
