So Yummy Baked Potato Salad

"My deli carries a yummy baked potato salad. I asked them what was in it and they told me. I had some leftover baked potatoes that I needed to use so I tried making it and it was a BIG hit at my house. It disappeared before I got it to the dinner table...lol !"

  • Gently stir together all the ingredients in a large bowl using a large spoon, reserving a little cheddar, green onion and bacon for garnish.
  • Transfer to a serving dish.
  • Top with reserved shredded cheddar, green onion slices and bacon crumbles for a beautiful presentation.

  1. I adore potato salads, especially homemade ones and this was a real winner! Mind you, with bacon, cheese and spring onions, what's not to love? Tasted great the next day too!
     
  2. Normally, traditional potato salad, would contain chopped hard boiled eggs, this version is eggless. It's more like a "Loaded" baked potato salad.
     
  3. I agree that this recipe should be made the day before serving and it is well worth the wait. It is delicious and the true testament is from a person who up to this recipe never liked any potato salad recipes.
     
  4. Loved it! I baked my potatoes in microwave - 7 minutes on each side. Only thing I added was from another's review that suggested red wine vinegar - it really bumps up the flavor. Hubby said this is the best potato salad he has had (he generally prefers American style with the mustard).
     
  5. This was good and easy to make. I used two cans of sliced potatoes. I followed the rest of the recipe as written. I did have to add a bit more sour cream and mayo. This was different but we enjoyed it. I liked it better the longer it sat.

Tweaks

  1. My sister in law made this and it was delicious. I made a few alteration though. I used plain fat free yogurt instead of sour cream and turkey bacon instead of pork. I will definetly make this again, it a winner!!!
