  • Heat oil in large pot. Dice onion,chop carrots, bell pepper and zucchini; saute 3 to 5 minutes stirring constantly. Mix in the canned beans and tomatoes.
  • Bake at 375.
  • Top with torilla chips and paramesan cheese; broil 1 minute.

  1. Followed your ingredient list right on down, then hit a bump when it came to step 2 & the "Bake at 375"! Since there was no time limit, I poured half of the stew into a casserole, baked it for almost 35 minutes, then went on to step 3 & had A GREAT TASTING STEW! The other half (with no chips or cheese on top) went into the freezer for another time! Thanks for a great stew! [Tagged, made & reviewed for one of my adoptees in the current Pick-A-Chef]
     
  2. Liked it because it was filled with healthy veggies. Compulsorily added 2 pats of butter to the oil when sauteing the onions, carrots, and bell peppers. Added some hot sauce when adding the tomatoes. I also rinsed and drained the beans, not sure if that was okay, just what we're used to doing.
