Snickerdoodle (Coffee) Cake

This is one of my husband's favorite Coffee Cakes. He has a few!! I also made this for my Mother-In-Law and she loved it!!

  1. Preheat oven to 350 degrees F.
  2. Grease an 8 inch square pan.
  3. Make topping by mixing 1/4 cup sugar and 1/2 teaspoon cinnamon with 1 tablespoon butter. Set aside.
  4. In a large bowl mix flour, baking powder, 1/2 cup sugar and 1/2 teaspoon ground cinnamon. Cut in shortening to a fine grain.
  5. In a separate small bowl beat egg, then pour in milk and mix together.
  6. Beat into dry mixture with minimum of strokes.
  7. Spread batter into prepared pan and sprinkle with topping.
  8. Bake in the preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of the cake comes out clean. Serve warm.

This was super bland for me. Needs more flavor! Good moist texture though.

This cake is really easy and takes no time to make. I doubled it with great results. I thought the cake was really light and quite good for what little effort it took. Thanks for sharing.

I made this as part of PAC Spring'07 - yet another tasty recipe from Nikki Kate! I actually made it the night before taking it to work, so we didn't get to enjoy it warm, but it was delicious nonetheless. I used vanilla sugar in the topping and added a splash of vanilla to the batter (can you tell I like vanilla??) and it was scrumtpious! A very nice coffee cake and so easy to throw together!
