Made for a wonderful light dinner tonight.. Figure I would try this since the kids particularlly do not care for zucchini, and IT WORKED !! It worked for onions in the past. They loved it, and so did I,. It also made for a dinner itself, and I did tell the kids about the zucchini, and they do want this again. Made for your win in Tic Tac Toe....

I made this last night to pair with pork loin chops and apple glazed carrots. For me it was a 5 but neither of the two gents really enjoyed the white sauce. Please keep in mind that one has adopted the life motto of "I'm not a rabbit" and will do a lot to avoid eating anything from the veggie world (baked potatoes loaded with tons of butter and sour cream being an exception). The other didn't like the texture (it never did get as smooth as a dairy product) and said "something tastes weird". I'm sure that would have been the zucchini. On the up side, I loved the tastes here and the fact that the calories and fat are at a much healthier level. The potato could be a meal in it's self. I made a smaller spud for myself and it's very filling. I will, very happily, make this again for myself and I'll add in the broccoli when I do. If you don't live with Orc's like I do you'r family should really enjoy this recipe. Give it a try.
