This is a recipe handed down to me by my mom. My husband and kids get excited when they see I have bought green beans, because they know they are in for a treat. As a lower fat option I omit the bacon, and cook the onions in a dash of canola oil. I save the bacon for when I serve it to company.

  1. Cook the green beans until tender.
  2. Fry the bacon (if using) until crisp.
  3. Drain and crumble.
  4. Cook the onions in about 2 Tablespoons of the bacon fat, just until they are tender.
  5. Toss the hot green beans, onion and bacon together.
  6. Drizzle with the tarragon vinegar.

My family loves this recipe. To save time I use 2 cans Green Beans. (Yes canned..I've had no complaints ;-) I also add 1/2 teaspoon salt.

These are yummy green beans. I really enjoyed the flavor of the tarragon on these and bacon is a great addition to green beans. I will make these again!

I loved the flavor that the tarragon vinegar added to this recipe. Dave did not. We used fresh green beans that were given to us yesterday. So good and so pretty on the plate. The only thing I did different was to slice the onions instead of chopping them. I'll be making this again for me, but not Dave. thanks for sharing.
