      I made this on 3/17/13 for mine and my SO's dinner using some leftover fried chicken from a previous meal. Since I don't care for mushrooms, they were omitted from the recipe.And depending on the type of gravy you use,no other seasonings or spices are really needed. I like the fact that this recipe makes a great use of leftovers, and can be whipped up in a matter of minutes.My SO and I give this recipe a good " SOLID ****'s ".       Great way to use up left over chicken. I made gravy after I fried chicken tenders for use in another recipe. With leftover chicken tenders and gravy in the refrigerator I searched for a recipe to use them, or at least the chicken. Your recipe sounded yummy. I sliced the tenders and added about 1/4 cup of dry white wine. This did not taste like leftovers. Thanks for posting bmcnichol.

      I love this! It's a great way to use up leftover chicken. I made a few adjustments: carmelized the onions, added some dried herbs de provence and a splash of sherry to the mushrooms as they cooked. I turned this into a hash, by serving over browned red potato cubes.

      This was a nice, new way to use up leftover roast chicken. I made this exactly as posted, cutting the chicken into bite-size pieces and using fresh parsley. This was comfort food in a skillet! Thanks for sharing this quick meal!
