  1. Heat oil in large ovenproof skillet on medium-high heat. Add chicken and vegetables; cook and stir 3 minutes or until chicken is cooked through. Stir in Rice Mix and water.
  2. Bring to boil. Reduce heat to low; cover and simmer 25 minutes or until most of the water is absorbed and rice is tender. Remove from heat. Sprinkle with cheese.
  3. Broil 2 minutes or until cheese is lightly browned. Let stand 5 minutes.
