  • Clean chicken breasts and dry well.
  • In a shallow dish combine flour, cayenne pepper, paprika, salt and pepper.
  • Dredge chicken breasts in flour mixture to coat and shake off excess.
  • In large skillet heat 1/4 cup oil over medium heat.
  • Add chicken and brown well on both sides.
  • Remove chicken from pan and set aside.
  • Pour excess oil from pan, leaving a thin layer.
  • Add onions and garlic, saute, stirring occasionally until translucent, about 3-5 minutes.
  • In a bowl combine sour cream and chicken broth and green onions and mix well.
  • Transfer chicken back to skillet, and pour sour cream mixture over it.
  • Bring to a simmer and cook, covered, until done, about 10 minutes.
  • Serve on buttered noodles with chopped parsley.

  1. I prepared this tonight, and I thought it was down-right tasty! My daughter loved it too, Husband wasn't wild about it, but - 2 against 1 - we win! I thought it was plenty flavorful, but did add a little salt to the sour cream mixture - also pepper, because pepper is tops in my book. I'm a pro at buttered noodles. I thought the whole thing was delicious, easy, and it didn't have any cream soup in it! Thank you for sharing it.
     
  2. This was very good and easy to make. I did use fat free sour cream to help with the waistline. I think that I would have liked the sauce slightly thicker, but it was very good just the same.

  4. Total hit with all of my family. I added extra onion because we like onions. I wanted the sauce thicker so I added about 1/2 Tbs of flour to the sauce while simmering. I let it simmer for probably half an hour instead of the time called for. Liked it! My hubby is the cook in our house and he could not figure out what it was made from. Will make again!
     
  5. Very nice recipe. I used low sodium chicken soup and reduced fat sour cream and it was still very good. I omitted the extra salt but added the pepper. I will be serving this again.

Tweaks

  1. Easy to make and tasted good. I halved the recipe, except for using one chicken breast. I also substituted red chili powder for the cayenne, and half-and-half for the sour cream, as that's what I have. I would make more sauce the next time. My roommates commented that the kitchen smelled good when they got home..

Love to read. I collect books and have quite a collection but am always adding more. I have also discovered audio books and find that I am able to get through more books by listening to them. Have recently started knitting and I really enjoy it even if it is quite a challenge at times. Always searching for a great recipe in any food category. As might be expected I never find "The One" but find many delicious ones along the way. One of our favorite restaurants is Jensen's Supper Club located in Eagan, MN.
