  • In a large bowl, toss the diced apples and pears in the lemon juice.
  • Add the celery, onion, pecans, and smoked Gouda.
  • Stir together the Dijon mustard, sugar, black pepper and mayonnaise. Gently fold into the salad and mix well. Add salt, if needed, to taste.
  • Chill until ready to serve.
  • Serve on a bed of baby spinach or other greens.
