Smoky cheese and chicken quesadillas with guacamole

This is great as a snack, or even dinner in a pinch...it's fast, easy and delicious. I sometimes use a store-bought rotisserie chicken to save time (and they're easy to shred while warm) The serving sizes are based on serving this dish as an appetizer.

  1. Combine cheese, chicken and cilantro in a large bowl.
  2. Arrange tortillas on a work surface and place about 1 cup filling on one half of each tortilla.
  3. Fold over and press together.
  4. Grill tortillas on a barbecue or in a grill pan for a few minutes on each side until browned and cheese is melted.
  5. Cut each into 4 wedges.
  6. For the guacamole, combine lime juice with salt, chiles and cilantro.
  7. Just before serving, mash in the avocado.
  8. Season to taste.
  9. Serve guacamole with quesadillas as a dip.

This was good!Lots of flavor!The smoked mozzarella cheese was a nice change.I did have to add sauteed red peppers and onions.And found the my grilled chicken was just fine sliced. Just didn`t have time to shred it. Thanks for a smoking meal!
