Smokey Chipotle White Bean Chile

- 3 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 1⁄4 teaspoon nutmeg, grated
- 1 teaspoon brown sugar
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 2 medium onions, diced
- 5 garlic cloves, diced
- 1 jalapeno, diced
- 1 1⁄2 lbs ground beef
- 4 chipotle peppers, with some of the adobo sauce, chopped (from a can)
- 1 (28 ounce) can whole tomatoes with juice, hand crushed
- 1 six oz.can tomato paste
- 1 (15 1/2 ounce) can white great northern beans, drained and rinsed well
- 2 cups cheddar cheese, grated

directions
- Mix the first seven ingredients together to make the spice mix.
- Chop the onion, garlic and jalapeno.
- Brown the ground beef, onion, garlic, jalapeno and spice mix in a large, heavy bottomed sauce pot.
- Add the chipotle peppers, crushed tomatoes and their juice and tomato paste.
- Chipotle note: I find chipoles in adobo sauce smokey and spicy but not hot. Not everyone agrees with me so adjust to your taste. On scale of 1 to ten, with ten being the hottest, this made as stated is a 6.
- Simmer for two hours, stirring occasionally.
- Taste for seasoning and adjust to your taste.
- Gently stir in the beans.
- Simmer for one more hour, stirring once or twice.
- Serve with grated cheese and crackers.
- Enjoy!
