Smoked Turkey and Country Ham Salad Sandwich

ingredients
- 3 cups chopped smoked turkey
- 2 cups finely chopped cooked country-cured ham
- 6 hard-boiled eggs, peeled and chopped
- 1⁄2 cup finely diced onion
- 1⁄2 cup finely chopped celery
- 1⁄3 cup prepared yellow mustard
- 1 cup mayonnaise
- 1⁄2 cup sweet pickle relish
- 1 teaspoon garlic granules
- 1 tablespoon dried parsley
- seasoning salt, to taste (use with caution)
- fresh ground black pepper, to taste
- 10 hoagie rolls, toasted if desired
- lettuce leaf
directions
- In a large mixing bowl, combine the first 10 ingredients; taste salad.
- Carefully season to taste (if needed) with salt and pepper--country ham is plenty salty so you may not need any salt.
- Cover and refrigerate for several hours.
- Spread about 1 cup salad on bottom half of toasted rolls; top with a few crisp lettuce leaves, cover with roll tops and serve.

BETTER than chicken salad or any other salad sandwich out there!! Used leftover SMOKED turkey.... MMMMM!! (tased like it had bacon in it, but didn't!!) had no ham so i used 5c turkey, used salad dressing instead of mayo, celery salt instead of seasoning salt, pepper, i think i may have put a dash of beau monde seasoning. kept everything else roughly the same, just adjusted the amounts accordingly. served on yummy cheddar jalapeno crusty rolls. kids LOVED.... sorry thought i would be able to take pics after supper... didn't make it that far. they were GONE! THANKS FOR A SUPER RECIPE!!!!

SO GOOD!!! I made it to eat for lunch this week. I've had it a few days now and I still look forward to lunch time. The seasonings really give it that extra "kick" that most sandwiches of this type are missing. I didn't have to add any salt. It was perfect as is. Thank you for sharing!! Recipe was easy to prepare as well.
