Smoked Salmon Spread

- 1 (15 1/2 ounce) can pink salmon, drained and flaked
- 1 (8 ounce) package cream cheese, softened
- 1 tablespoon red onion, grated
- 1 tablespoon horseradish
- 1⁄4 teaspoon salt
- 1 tablespoon lemon juice
- 1⁄4 teaspoon liquid smoke
- 1⁄4 cup almonds, finely chopped (from a package of sliced almonds)
- 2 tablespoons fresh parsley, chopped
- 1⁄4 cup pretzel, thins (crushed)
directions
- Remove skin and bones from salmon. Combine all ingredients (except nuts, parsley and pretzels) in a bowl. Mix well with a fork. Form into a half round ball. Wrap with plastic wrap and chill for 2 hours. Mix nuts, parsley and crushed pretzels together, then put on top of chilled ball, pressing lightly to adhere. Serve with Ritz crackers & enjoy!

I made this a couple times for family gatherings back at Christmas. (And it looks like I should have reviewed it in January for the Craze-E Contest. :oops: Sorry!) It was a huge hit! My sister was totally thrilled because it reminded her of the salmon dip our great-uncle used to make. I just made it again for the Ayyam-i-Ha party I'm having tomorrow. I've gone vegetarian in the meanwhile and making this was quite a temptation! We'll see if I succumb at the party tomorrow. lol. This dish is really delicious and so easy to make. Thank you!
