Smoked Salmon Penne

  • Bring a large pot of salted water on to boil. Season it liberally with salt. When it boils, add your choice of pasta. Cook to el dente, until the pasta is cooked through but still pleasantly chewy.
  • Scoop out 1 cup or so of the starchy cooking water. Drain the pasta but not quite all the way. Leave it a bit wet. Put the pasta back into the pot along with a splash or two of the reserved water, about 1/2 cup or so in total then immediately add the rest of the ingredients.
  • While the pasta is till steaming hot toss well melting the cheese and forming the creamy sauce. Season with salt and pepper. Serve immediately.

  1. Quite tasty! I used about 4 Tbsp of dill instead of fresh. I think the fresh would have been better. 5 out of 5 of my family liked this dish.
     
  2. I can't believe how delicious and easy this way! My only complaint is that the measurements of ingredients were not exact. A "bunch" of dill is a LOT!!! I used only about half and it was perfect. This is not the most healthy or economical dish but I will make it again. Elegant enough to make for a date or dinner party.
     
  3. So easy! This was really good. I think you could eat it cold also. I used lemon juice because I didn't have a lemon, but I think using the lemon zest would add more flavor. Thanks for sharing this!
