I made up this recipe because I love smoked salmon and I needed something easy to make when I was expecting out of town company that would be arriving late

  1. Make your mayonnaise spread with the mayo., capers, zest and lemon juice.
  2. In a stove top smoker, smoke your salmon with alderwood chips. Smoke for about 25-30 minutes or until fish is completely cooked.
  3. Now assemble your panini with the Salmon, tomato, onion, mayo and mozzarella and place in your panini press and cook for about 8 minutes.

Yum! I love the dressing. So fresh tasting! There is a great butcher in my town that smokes meat and fish. It is so delicious so I bought some instead of smoking my own. I used thinly sliced Maui onion and tomatoes from my garden. Delicious dinner served with garden salad and fruit. Made for PAC Fall 2009.
