Smoked Salmon Paninis

- 1 lb salmon fillet
- 1 sweet onion
- 1 beefsteak tomato
- 1⁄2 cup mozzarella cheese
- 4 tablespoons mayonnaise
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
- 3 tablespoons capers
- 3 loaves ciabatta
directions
- Make your mayonnaise spread with the mayo., capers, zest and lemon juice.
- In a stove top smoker, smoke your salmon with alderwood chips. Smoke for about 25-30 minutes or until fish is completely cooked.
- Now assemble your panini with the Salmon, tomato, onion, mayo and mozzarella and place in your panini press and cook for about 8 minutes.

Yum! I love the dressing. So fresh tasting! There is a great butcher in my town that smokes meat and fish. It is so delicious so I bought some instead of smoking my own. I used thinly sliced Maui onion and tomatoes from my garden. Delicious dinner served with garden salad and fruit. Made for PAC Fall 2009.
