A wonderfully refreshing lunch. I used wholemeal/wholegrain bread and thin slices of smoked salmon and freshly peeled sweet river prawns with just a drizzle of fresh lemon juice and a sprinkle of freshly ground pepper and I thoroughly enjoyed my two slices for lunch. We took our summer vacation in Norway last year, and even though this is a Danish recipe, it reminds me of the several days on the trip where I managed to have salmon in some form at every meal of the day. What I like about this recipe is that it doesn't try to hide the salmon or the shrimp under a ton of creamy sauce. Instead, it lets the luxurious natural flavours of good smoked salmon and the fresh shrimp come through. Made for Zee Zany Zesty Cookz for ZWT6.
