This was heavenly. Maybe that's an impartial opinion though, because I love smoked salmon in any way, shape or form. But this was great, especially with the caramelized onions. I know I bought fresh chives not too long ago, but dang if I could find them when preparing these omelets for breakfast this morning. So instead, I use my dried chives. It was fine, but I think fresh would have tasted and look better. Thanks, twissis. Made for your awesome win in the Football Pool. Yum!

Yummy! For 1 omelet, I used 1/2 of a small onion, which was perfect for me. The combination of the smoky fish, sweet caramelized onions, and eggs is wonderful. I used all butter, instead of oil with the onions. Made for ZWT9

What a great omelet, and so filling! Perfect combination of flavors. I added some chives to the egg mixture before cooking, also.

Wow, wow, wow! I loved this. The combination of eggs, salmon, onions and sour cream put me in heaven. So quick and easy to make and tasty, tasty, tasty. Don't be tempted to leave out the sour cream, it takes it up and away to another place. I didn't have any fresh chives so I used thinly sliced green onions for garnish, they worked very well with the other ingredients. Into my keeper box this goes, thank you so much for sharing.
