- 4 eggs
- 59.16 ml water
- 28.34 g smoked salmon, cut into slivers
- pepper, to taste
directions
- Lightly beat the eggs with the water. Put the bowl over a saucepan with boiling water, lower the heat and stir the eggs while they cook. Stir in the smoked salmon and add freshly ground pepper to taste. Wonderful served with toast!

I love the bain-marie technique and I love this dish! Having been a NAVY brat, I didn't grow up eating a lot of seafood but after 10 years in Alaska, who wouldn't love smoked salmon. I was a little bad on my diet since I added a little dollop of cream cheese into the eggs as they cooked. MMM MMM Good!
