I love smoked salmon! This is a simple way to enjoy it. This is from "15 Minute Meals" by Emalee Chapman and she was served this dish at the Cafe Flore in Paris. Try this French way of scrambling the eggs to make them extra creamy! Posted for ZWT8 France
- Lightly beat the eggs with the water. Put the bowl over a saucepan with boiling water, lower the heat and stir the eggs while they cook. Stir in the smoked salmon and add freshly ground pepper to taste. Wonderful served with toast!
I love the bain-marie technique and I love this dish! Having been a NAVY brat, I didn't grow up eating a lot of seafood but after 10 years in Alaska, who wouldn't love smoked salmon. I was a little bad on my diet since I added a little dollop of cream cheese into the eggs as they cooked. MMM MMM Good!
