Yummy! This was delicious. I left out the mushrooms because my little girl doesn't like them and added a couple cloves of minced garlic. It was so rich and creamy. Thanks, ChaCha!

very good and very rich! I made this casserole using regular gouda as my grocery store does not carry the smoked, it was still wonderful, I used about 1/3 cup yellow onion instead of the shallots and also also added in 2 cloves minced garlic and some cayenne pepper, thank you for sharing this Chachie!

This is an awesome dish! It has fantastic flavor. I made this when family came for dinner and mom especially could not stop raving about it and immediately asked for the recipe. Thanks for posting this keeper!

I decided to take this to a potluck BBQ over the weekend and...wow! I was hesitant because I usually am asked to bring a broccoli cheese casserole that I am famous for but I thought I would rock the boat a little and try this. It went over very well with the adults but the kids were a little put off by the spinach and "strange cheese." So I just shoved a chicken leg in their mouth and told them to go play. This is a great dish but a little pricey to make because of the expense of Gouda- but don't let that stop you from trying it... it is great!

Charbear, this was a great side dish. I thought it would be really heavy with the cheese and cream, and it wasn't too heavy at all. I did have a problem getting the Gouda to melt, but it didn't seem to matter. I do think it needs a "spice addition", I tried some fresh ground nutmeg and that was good, you could also try corriander. I would add another 1/2 cup of mushrooms, I like mushrooms. I wondered if I could subsitute fresh spinach for frozen and my mom said she read somewhere not to do that, so frozen it was (and it tasted good to me) My mom thinks you could subsitute milk for the cream, but I say why bother? Thanks Charbear!

This was really nice. I love the cheese and spinach combination. I am not a big rice and mushroom fan, but my husband is and he really enjoyed it!
