This is my favourite way of having smoked cod.

My husband loves smoked fish and this is an excellent way to serve it - don't omit the parsley. He likes it served on toast. Thanks for reminding me of this simple and tasty recipe.

  1. Melt butter in a saucepan. Add onion and cook until tender.
  2. Stir in flour, and cook for about 1 minute, stirring constantly.
  3. Slowly stir in milk.
  4. Add fish and parsley, and simmer until sauce thickens and fish is cooked through.
