  • Preheat smoker to 225°F.
  • Combine all ingredients in a bowl and mix to coat the chicken.
  • Smoke with apple, hickory, maple, or pecan wood chips. Use the water tray in your smoker so the meat doesn't dry out.
  • Depending on the thickness of the meat it will take anywhere between 45 minutes (for boneless thighs) to 2 hours (for large breasts). Meat is done when the internal temperature reaches 170-180.
