- 1360.77 g yukon gold potatoes, peeled and quartered
- 236.59 ml heavy cream
- 9.85 ml salt

green garlic butter
- 118.29 ml butter, softened
- 2 clove garlic
- 88.74 ml chopped fresh parsley
- salt and pepper
directions
- Boil potatoes and salt covered with water until done.
- Meanwhile, place butter, garlic and parsley in food processor and process until smooth.
- Drain potatoes well and place back in pan over low heat.
- Add cream and garlic butter and mash by hand.
- Add salt and pepper to taste.
