Slower Cooker Potato Soup

ingredients

• 6 cups cubed potatoes (we leave peelings on but feel free to peel)
• 5 cups water
• 2 cups chopped onions
• 1 stalk celery, chopped (about 1/2 cup)
• 1 carrot, thinly sliced
• 1⁄4 cup butter
• 5 chicken bouillon cubes
• 1 teaspoon fresh ground pepper
• 1⁄4 teaspoon ground cumin (feel free to use more or less)
• 1⁄4 teaspoon cayenne pepper (feel free to use more or less)
• 1 teaspoon minced bottled garlic
• 1 (12 ounce) can evaporated milk
• 3 tablespoons fresh parsley, chopped

directions

1. Spray large slow cooker with cooking spray.
2. In slow cooker, combine all ingredients except evaporated milk and parsley.
3. Cover and cook on high for 2 hours and then turn on low for 5 hours.
4. Add milk and parsley. Mix well. Cover and cook additional 30 to 60 minutes longer.

Really delicious soup happynana! I made as written, except that I used chicken stock in place of water and bouillon cubes - easier to control the salt! I also used white pepper. I will surely make this again! Made for Spring PAC 2009.

This soup was ok but not quite my taste. I've tried crock pot recipes with potatoes before and something about the combination of potatoes and crock pots just doesn't do it for me.
