    Pork tenderloin chunks are simmered until tender in the crock pot in an orange juice flavored curry sauce and served with brown rice garnished with fresh cilantro and chopped peanuts. Along with a side of peas and a fresh green salad makes for a delicious meal!

      I made this without an apple or orange juice. Broth was from the cube. The cube taste was a bit too overpowering and in general I try to avoid cooking with it too often as it is not healthy. Maybe next time I will just use half of the cube plus the orange juice and the apple that I omitted this time. But I must say I loved the way the meat became tender, it was falling apart from the fork. Plus the gentle spiciness of the curry. I will make it again for sure. By the way I cooked it in the pressure cooker (5 whistles) and it was ready in about 15 min. Served with boiled baby potatoes dug out 15 min. before from the field - what a meal! Thank you for posting it, if it wasn't for you, I wouldn't have the slightest idea what to do with a big chunk of pork my mom took out from the freezer this morning.
