Slow Cooker Whole Wheat Bread

I found this recipe in the fix it and forget it cookbook and thought it was intriquing. Hope you will too!

  1. Mix together milk, oil, honey salt, yeast, and half the flour in electric mixer bowl.
  2. Beat with mixer for 2 minutes.
  3. Add remaining flour.
  4. Mix well. Place dough in well greased bread or cake pan that will fit into your cooker.
  5. Cover with greased tin foil.
  6. Let stand for 5 minutes.
  7. Place in slow cooker Cover cooker and bake on High 2 1/2-3 hours.
  8. Remove pan and uncover.
  9. Let stand for 5 minutes.
  10. Serve warm.

5-stars for the excellent idea! Quick and easy to prepare and bake. The mixture was more the consistency of a batter than a dough, so I poured it into the loaf pan (I have an rectangular crockpot). It rose well (in fact the baked loaf lapped over the sides a bit). 3-4 stars for its texture & taste: It's texture was not as fine as 2-rise dough breads - more like a peasant bread. Flavor was good but rustic tasting. I think reducing the flour and liquid quantities a little, leaving the other ingredients the same, would make loaf more rich and have it fit into a large loaf pan without running over the edges. I'm going to experiment with other bread recipes using this crockpot technique. Thanks for the idea, Tish.

Easy and tasty! The directions didn't state how exactly to cover the pan with foil. I tented the foil and sealed it around the edges of the bread loaf pan. It seemed to work well, but it would have raised even more had I left it more room. Anyone else cover it differently? I was thinking I could get creative with the foil, such as make the top of the loaf into a heart for Valentine's Day or something...very good bread. could use a little more flavor though.
