  • Place chicken in slow cooker.
  • In medium bowl, combine salsa, peanut butter, lime juice, soy sauce, gingerroot, and white pepper; mix well.
  • Pour this mixture over chicken in crockpot.
  • Cover slow cooker and cook on low for 8 to 9 hours.
  • Sprinkle with chopped deanuts.
  • Serve over hot cooked rice or couscous.
  • Add some stir-fried bean sprouts if desired.

  1. We really didn't like this. It could have been me, but I think the peanut butter turned weirdly gritty. I won't be making this again. Sorry.
     
  2. The peanut butter in this dish did not contain enough sweetness to offset the combination of salsa, lime juice and soy sauce. So I had to add 2 tablespoons of brown sugar to it. Even then my family said it was too vinegary. Good recipe, but really needs a lot of tweaking.

Love to cook and entertain! I love this site and have found so many great recipes...I am known for my Moussaka and Spanikopita; also love to bake. I come from a long line of ladies who love to make delicious food for their family. We are not Greek but my grandmother grew up with a Greek family who taught her their delicious recipes. She has passed them down to us, along with many other delectable family traditions. I once sent her recipe for stuffing into the paper, who was publishing the best stuffing recipes; they selected hers out of hundreds of entries and only published eight!
