Slow Cooker Beef Bourguignon

- cooking spray
- 2 lbs stewing beef
- 1 large carrot, sliced
- 1 medium onion, sliced
- 3 tablespoons flour
- 2 cups beef stock
- 1 tablespoon tomato paste
- 2 garlic cloves, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried tarragon
- 1 bay leaf
- 1⁄2 lb white pearl onion, peeled
- 1 lb mushroom, sliced
- 1⁄2 cup dry red wine
directions
- Spay skillet with cooking spray. Add beef, carrot and onion; cook until beef is browned. Add flour and cook 1-2 minutes.
- Stir in beef stock and heat to boiling. Transfer to slow cooker.
- Add remaining ingredients, except mushrooms and wine. Cover and cook on low 8-10 hours. Add mushrooms and wine during the last hour of cooking. Discard bay leaf.

I can't stop eating it, and I've eaten myself into a food coma. <br /><br />4 Stars The recipe is wonderful as is. I can't think of a single improvement and I will most likely make it again. <br /><br />3 Stars This needed a little *something*something*. I might make it again, but will add my own improvements if I do. <br /><br />I love to eat! And I love to cook. I tend to take over the kitchen when I get in there. Even the dog knows the command get outta my kitchen! LOL. Cooking for other people and trying new recipes or foods is FUN!
