- 3⁄4 lb boneless skinless chicken breast half, cubed
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 1 tablespoon olive
- 1 1⁄2 cups chicken broth
- 1 (11 ounce) can great northern beans, rinsed and drained
- 1 (11 ounce) can garbanzo beans, rinsed and drained
- 1 (11 ounce) can whole kernel corn, rinsed and drained
- 3 tomatillos
- 1 teaspoon ground cumin
directions
- In a large skillet, saute chicken, onion and garlic in oil until onion is tender. Put into slow cooker and add remaining ingredients. Stir, cover and cook on low for 7-8 hours.

I followed your recipe pretty much all the way, but although I don't like stuff really hot & spicy, I did feel the need to add dash or two of chili powder! We do love chicken chili, & your recipe is just great! I froze half of it for another time (sometime after PAC) & thoroughly enjoyed the rest of it! Thanks for sharing the recipe!
