Sloppy Joe Macaroni and Cheese

  • Preheat oven to 375°F
  • Coat 2-qt. baking dish with 1 Tbs. butter.
  • Cook pasta according to package directions; drain.
  • Meanwhile, in large skillet, heat 1 Tbs. butter over medium heat.
  • Add onion; cook until softened.
  • Add beef; cook until lightly browned, 3 minutes.
  • Stir in sauce, 1 cup water and seasoning mix; cook 5 minutes.
  • Combine milk and mustard; bring to boil.
  • Reduce heat to low and whisk in flour; cook, whisking, until smooth and slightly thickened.
  • Stir in 2 cups cheese and pasta.
  • Spread meat mixture in baking dish; top with pasta mixture, then remaining cheese.
  • Melt remaining butter; stir in breadcrumbs.
  • Sprinkle over cheese.
  • Place baking dish on baking sheet.
  • Bake until golden, 25-30 minutes.

  1. As the previous reviewer stated, do not boil the milk or you will get grainy sauce. Heat milk just to a simmer. For my taste, had to adjust seasoning of both the sloppy joe mixture and macaroni cheese mixture with both salt and pepper or would have been bland. Quite tasty comfort food casserole, but not exactly a quick and easy recipe.
     
  2. We found this to be tastey with definite potential. Cheddar may not have been the best choice as the sauce ended up grainy and a bit bland. This recipe is definitely worth trying again but I will add a little garlic powder and seasoned salt to the sauce and change the cheese to American for a creamier texture. Maybe just sprinkle the top with cheddar. The sloppy Joe layer was delicious. Thanks for sharing. *Made for Fall PAC 2008* *Editing to add* I need to apologize for previously leaving a 3 star review thinking the recipe needed to be changed due to the cheese being grainy etc... It was definitely operator error because I know better! When you heat the milk- DO NOT BOIL IT. If you just heat it to hot- watch it closely and then add the flour, cheese, etc... you will NOT get a grainy sauce. I made this again tonight because we did like it, and it dawned on me what went wrong. I did use American/mild cheddar, spiced it up a bit and it was awesome!

I used to spend my summers with my grandmother in Northern Connecticut. She was a wonderful little Norwegian woman that stood about 5 feet high. My grandfather was a Swedish ship captain that stood well over 6 feet tall. My grandmother would wake up at 5 in the morning just to start making her bread (that had been proofing in the oven all evening) I would anxiously await the warm, crusty, tremendously tasty bread spread with home made strawberry jam or any other berry that she might have picked in the neighbors yard. These memories of her and her patience in the kitchen with me made me the cook I am today.
