A quickie to make for dinner.
- 4 medium tomatoes, sliced
- 1 medium red onion, sliced
- 3 tablespoons fresh basil, chopped
- 2 tablespoons red wine vinegar
- 3 tablespoons olive oil
- salt and pepper
- Arrange the tomato and onion slices so they are overlapping on a platter.
- Sprinkle with the basil.
- Drizzle with the vinegar, then the oil.
- Season to taste with salt and pepper.
- Serve at once.
