Sliced Potato Skins With Shrimp

- 3 large potatoes, your choice
- 3 tablespoons olive oil, drizzle
- 1⁄2 lb shrimp, cooked and cut
- 1⁄2 cup scallion, chopped
- 10 grape tomatoes, sliced
- 1⁄2 cup feta cheese, crumbled
- 1⁄4 cup balsamic glaze, drizzle
directions
- Bake potatoes until slightly under cooked. Approximately 30 minutes depending on what type of potato you use. Then cool. You can do a day ahead of time and put potato in fridge.
- Slice in to ½ inch pieces and place on a baking dish or aluminum foil if doing on the grill.
- Drizzle Olive Oil over potatoto.
- Add shrimp, scallions, tomatoes and feta and grill until heated through. (10-15 minutes tops) Remove from heat.
- Drizzle Balsamic Glaze over top. Using a fork makes drizzling easy.
- Eat immediately.
- This recipe is endless. It's great as the traditional potato skin recipe. I've done a buffalo chicken version. Grilled veggies is also amazing.
