directions

  • Peel and slice cucumbers.
  • Place in large bowl and set aside.
  • Mix remaining ingredients in a small saucepan.
  • Bring to a boil, simmer a few minutes.
  • Let this cool.
  • Pour over cucumbers and refrigerate a couple hours.

  2. Cucumbers are a fave here. Have to admit, I pickle cucumbers like this, but don't really eat them right away. Great, and joyfully delicious! I did add 1 tablespoon of kosher salt, and 1 teaspoon red pepper flakes, for a bit of a kick! Thanks, baracious~for a unique change to a favorite vegetable!
     
  3. I must admit...I am guilty! I love cukes in any manner. As a matter of fact I eat at least one Kirby(pickling)cuke every day...raw, on sandwiches, in sour cream...any way you can imagine. Today I gave these a try, and they are wonderful! I often eat them sliced, tossed into vinegar,salt, and pepper. I love them just diced and mixed with cottage cheese. This just added a totally new dimension to that, but they still tasted like cucumbers(not grocery store pickles. I'll make these often as they are even better the next day, so no waste! Thanks!
     
  4. This recipe was so easy! The bonus, it tastes great. I didn't have any pickling spices and so I substituted ground cloves, garlic and sliced onions, they turned out great! I loved the tangy/sweet taste. My husband (who is picky) really liked them also.
     
  5. The flavor was really nice, but I had to compost alot of the cukes for they pruned up too much and none of us wanted to eat a mushy cuke. Did not peel the cukes, the english cukes I used have a nice crunchy skin. The cukes I cut thick held up MUCH better than the thinly cut ones. Will make them again but cut them in 1/2" or so slices. Thank You barbacious!
