  1. Peel potatoes.
  2. Cut potatoes into thin slices but not all the way through.
  3. Put potatoes in baking dish and fan slightly.
  4. Sprinkle with salt and drizzle with butter.
  5. Sprinkle herbs (parsley, chives, tyme or sage) over potatoes.
  6. Bake potatoes at 425 degrees for 50 minutes.
  7. Remove from oven.
  8. Sprinkle with cheeses.
  9. Bake potatoes for another 10 to 15 minutes until lightly browned, cheeses are melted and potatoes are soft inside.
