Slice and Bake Sugar Cookies

I like to make these up and give them to my daughters so grandchildren will have hot cookies..they are so much busier than giving love!

An excellent cookie recipe! I halved the recipe to try them out. Used butter for the margarine, all vanilla, and omitted the cinnamon. For the 3 eggs, I used 1 large and 1 smaller. At the end, the dough was a bit dry to roll into logs, so I added a splash of half and half and it came up to the right consistency immediately. This could have been due to trying to split the eggs, or using butter rather than margarine. I also cut mine thicker and got 24 cookies out of the first roll. I baked on parchment and they came out soft and delicious! Nutmeg would also be a good flavoring in place of the cinnamon. They would be stunning if you iced them. Grandma, thank you for the recipe! I love to keep cookies ready to bake in the freezer and these are delightful!

  1. in a large bowl, cream margarine and sugar together, beat in eggs, vanilla and lemon extract till light and fluffy --
  2. in seperate bowl, combine flour, baking soda and cinnamon --
  3. gradually stir flour mixture into egg mixture, until blended.divide dough into 4 equal pieces -- shape each piece into an 8x10 roll --
  4. wrap each roll in wax paper or plastic wrap -- , freeze, wrap each frozen dough in aluminum foil and again with these printed instructions.When I make them for gifts for friends.I like to overwrap the aluminum foil with fabric for the holidays --
  6. store dough in refrigerator till ready to bake --
  7. cut chilled dough into 1/4" on lightly greased cookie sheets.
  8. bake at 350* for 8-10 minutes or edges are golden.
  9. each roll makes about 3 dozen -- I cut mine a little it will be less.grandchildren like to decorate these as well -- so grandma always includes colored sugars.
